Article says yak cheese more healthy than cheese from dairy cattle |

Researchers in Nepal and Canada
have reported that cheese made from yak milk is apparently more healthy
than cheese coming from dairy cattle.
In a study published in the
March 12 issue of the Journal of Agricultural and Food Chemistry, researchers
said yak cheese contained higher levels of healthful fatty acids than
cheese made from dairy cows.
Scientists compared the fatty
acid found in yak cheese processed in Nepal with cheddar cheese from
Canada. Results showed the levels of conjugated linoleic acid, which
may help fight heart disease, were four times higher in the yak cheese.
The yak cheese also had levels
of heart healthy polyunsaturated fatty acids which were higher than
the dairy-based cheese.
Yak cheese is now being sold
in the United States.
